Vinification

Carefully hand-harvested and sorted, only the finest grapes were chosen for this Amphora wine. After gentle crushing, the grapes underwent spontaneous fermentation in clay amphoras (karas) with the skins. The wine aged on the skins in the amphora for an additional 6 months, developing rich, earthy flavors and a strong structure. The unique qualities of the amphora added new layers of flavor, enhancing the wine’s complexity. Only the free-run juice—the first and purest fraction—was used, avoiding pressing to ensure the highest quality.

The clay amphoras added subtle mineral notes, increasing complexity. After aging, the wine was moved to stainless steel tanks for further development. The wine was bottled in 2022.
